Reduced Fat Mac n Cheese Recipe

I never thought the day would come… but come it has… The Lady has not been eating cheese… twelve weeks since cheese touched her lips… it seems she and her doctor are negotiating… he wants to take possession of her gall bladder and she wants to keep it… her doctor doesn’t understand what he’s up against… when The Lady wants it her way… well… it usually goes that way…

I hearken back to that dark, dark day in late 2005 following “negotiations” between The Lady and The Man… The Lady wanted to chop my balls off and The Man wanted me to keep them… well… guess who won that negotiation… it sure as hell wasn’t moi… but I digress…

The Lady decided she just had to have mac n cheese today… something her doctor warned her to stay away from… “high cholesterol foods are off the table”… literally and that includes cheese… ironic, I might add.

Here’s what she did:

Ingredients:

EVOO

Jennie O Sweet Italian Turkey Sausage (4) – Sauteed with a little EVOO

Penne Pasta – Boiled in Low-Salt Chicken Broth

Sweet Onion – Chopped and Sauteed in EVOO

Garlic – Two cloves Sauteed in EVOO

EVOO – 2 Tablespoons

Flour – 2 Tablespoons

Salt and Pepper to taste

1 Cup Fat Free Half n Half

1 Cup shredded Reduced Fat Sharp Cheddar (made with 2% milk)

Preparations:

The Lady sauteed the turkey sausage in a little bit of EVOO. Then she removed and cut into slices and sauteed the slices till just browned on the edges. She removed the sausage and drained on paper towels.

Adding a little EVOO to the same saute pan, she added the onion and garlic and sauteed till translucent. Then she added 2 Tablespoons EVOO and heated. To this she added the flour and cooked until just browning. Slowly she added the Fat-free Half n Half and cooked for about 5 minutes, stirring constantly. Then she added the shredded cheese and sprinkled with salt and freshly ground pepper. She added the sausage to the sauce. Then tossed with the drained, cooked pasta and served.

It was delish…
