2012: Looking Ahead; Looking Back and Tuxford & Tebbutt Mature Irish Cheddar

2011 flew by, for The Lady literally flew by as her new job took her to New York (twice), Dallas (twice), Aiken, South Carolina, Denver (3 times), Boulder, Houston, Paris, France (just the airport… but she did see the Eiffel Tower as her plane took off) and Italy for a week… The Man and I had to live vicariously through her travels but with each travel came new cheeses which she brought home for me to taste and review. Unfortunately… or fortunately… she brought home so many new cheeses that my reviews are backed-up.

My personal resolution for 2012 is to review one cheese every day until I am caught up… probably won’t happen till mid-summer. Especially since The Lady begins her travels again next week when she ventures back to NYC to Greenwich Village and the mecca of cheese… Murray’s Cheese Shop on Bleecker Street…

“They” say what you do on January 1st is what you will be doing all year… to protect 2012, The Lady, The Man and I did only the things we enjoy the most:

The Man watched several (bad) movies, wrote… working on his latest book, took a nap with moi and ate two meals especially prepared by The Lady.

The Lady cooked a brunch of chicken (sauteed in olive oil), homemade (Emeril’s “Waffable Waffles”) waffles and sunny-side up eggs (also sauteed in olive oil); then she worked on  our website… doing some updates on existing pages, etc.; after that she spell-checked my review of the NYE cheese board she made for The Man and moi; she played in a poker tournament (five tournaments this past week and she monied in three of them) and ended the day serving a light evening meal of hummus, veggies and fresh baked flatbread.

There are several legends of where the combination of chicken and waffles began. My favorite claims that the performers in the Harlem Clubs started the tradition following their nightly performances. At 3am, when finally finished for the night, they headed to Wells Supper Club and combined their favorite breakfast food with their favorite dinner food… and fried chicken and waffles began and was added to the menu over tiem. The Lady and The Man first enjoyed this combination at Roscoe’s in Hollywood… back in the day…

And finally my day… I was awakened at midnight by those darned fireworks that are legal here in Washington… what it is with humankinds and “celebrating” with noise that hurts the ears of their favorite felines and causes them to hide??? Some way to treat your “best friends”… The “festivities” continued to about 2am; at which time I politely “asked” The Lady to provide my 2am snack of kitty pate. After eating I cuddled up next to The Lady and settled back into my slumber… being awakened so abruptly earlier required extra sleep and I didn’t rise until noon. Lucky me, The Lady was just finishing up brunch fixins and I got my fair share of chicken. I passed on the waffles… although they looked edible… that Emeril knows his stuff… The Lady and I then worked on my review of the NYE cheese board and then I took another nap on The Man’s lap while he, too napped. After that, I ate again and then I napped. After napping I hung out with The Man and watched a couple of bad movies… his favorite kind for some strange reason… and then it was bed time for the three of us. The Lady and The Man read while I cuddled on The Lady’s chest vying to distract her attention away from the book and transfer it to moi…

Before I turn to my review of Tuxford and Tebbutt Mature Irish Cheddar… a few words about “They”… “They” seem to know a lot; “They” seem to always be on the cutting edge; “They” offer advice, usually of the unsolicited variety; “They” think “They” have all the answers; “They” say a lot and “They” stick their noses into places “They” probably shouldn’t… but who are “They”?… This Feline Foodie has no idea…

The Lady brought Tuxford and Tebbutt Mature Irish Cheddar home following one of her summer cheese trips; knowing it would be a hit at The Manse. As previously reported, cheddar is probably the #1 favorite style of cheese we eat here at The Manse. We just can’t get enough cheddar and have reviewed more than eighty, including the vile Hard Goat Cheddar… thankfully, the rest have been splendid…

T&T’s Mature Irish Cheddar is coated with an emerald green wax to further announce its origins on the Emerald Isle. This cheddar is nutty and sweet with an after bite sure to please the even the pickiest of cheddar connoisseurs… Made from pure Irish milk from cows that graze in the verdant pastures of Southeast Ireland. Here, the winds off the Atlantic bring rains that deposit the minerals and salts of the ocean and assist the land in producing perfect lush grass filled with beta carotene… this is terroir at its best…

And being versatile, you can use this cheese for just about anything and every thing… from a cheese board to an omlette to your “adult” mac n cheese…

I give Tuxford and Tebbutt’s Mature Irish Cheddar 4 Paws out of 4 Paws (cause that’s all I’ve got).

Serving Suggestions: On a cheese board, you will WOW your guests; in you mac n cheese, you will cause your guests to swoon (as The Man often does) and as cheese toast… there will be weeping…

Wine Pairing: The Lady loves her Merlots with her cheddars… I wouldn’t know as “They” say alcohol is a no-no for felines and canines… sheesh…

Beer Pairing: The Man chose an IPA while my favorite Beer Enthusiast, Mike Wright chose Bud Light…
