April is Grilled Cheese Month: #9 Caprese Grilled Cheese

Finally, spring has come the Pacific Northwest and The Lady and The Man have opened “discussions” regarding the garden and in particular, The Lady is planning a bigger-than-usual herb garden…

And that put her to thinking about fresh tomatoes and fresh basil and fresh mozzarella… which put her onto a Caprese Grilled Cheese Sammie made up of her favorite fruit and favorite herb… she substituted the fresh basil for a Spicy Vegan Pesto from our friends at Bear Pond Farms… a terrific substitution…
