Cheddar Jasmine Rice and Salami Ragout

Sometimes The Lady just combs through the fridge and the pantry until she finds enough ingredients to make a “decent” dinner… sometimes The Man enjoys what she makes and sometimes he swoons… last night… The Man swooned.

The Lady had a wedge of black-waxed two year Black Diamond Extra Sharp White Cheddar that she brought back from our last Seattle trip… oh, that it really were our “last” trip to Seattle… I overheard The Lady telling The Man we have six more trips to Seattle this year… the box they put me in to travel; the long ride to Seattle with no litter box breaks, kitty pate, no cheese; the hotel where I am compelled to hide under the bed during the day to punish The Lady and The Man and the long ride home with no litter box breaks, no kitty pate and no cheese… oh… the un-humanity… but I digress…

The Lady prepared some jasmine rice and while the rice was cooking she made a side ragout of Genoa Salami, fresh mushrooms and fresh asparagus simmered in Merlot.

She shredded the wedge of Black Diamond and when the rice was ready, she mixed the cheese into the rice and served it with the ragout on the side… it was delish… and The Man swooned…
