Cracking Wheels of Parmigiano Reggiano

One of the fun events that occurs regularly in the Cheese Mines is cracking open a wheel of Parmigiano Reggiano; it truly is an event. One that Cheesemongers and spectators alike enjoy.

The Lady has assembled pictures for me to share of several “Cracking” she has witnessed in the past year: from Parma, Italy to New York to Seattle and yesterday in Portland, Oregon.
