Freshly Made Bruschetta From The Garden of The Man

IMG_20130815_192740_600A passion of The Man, in addition to The Lady, is container gardening and a passion of The Lady, in addition to The Man, is preparing food using the bounty from his garden. Everybody wins. The tomatoes are coming in, the bell peppers are in abundance and the herbs are overflowing their pots; the perfect combination to make bruschetta.

The Lady’s cheese friend, Rachel, recently gave her a bottle of O Olive Oil with crushed basil. This olive oil is not infused with basil. In making this oil, O crushed the fresh olives and the fresh basil together creating an amazingly fragrant aroma and taste. The oil is extra virgin and is cold pressed. Made in the Sierras with non-sprayed olives, no pesticides, just basil and oil.

To make the bruschetta, this is what The Lady did:

Ingredients:

Garden fresh tomatoes, chopped

Garden fresh green bell peppers, chopped

Garden fresh basil, chopped

Garden fresh chives, chopped

Garden fresh curly parsley, chopped

1 garlic clove, chopped

1/4 cup finely shredded Sarvecchio

Sea Salt to taste

Fresh Ground Pepper to taste

Splash of O Olive Oil crushed with fresh basil

Preparation:

Combine first 7 ingredients in a bowl and toss until well mixed.

Add salt and pepper to taste.

Top with a generous splash of the Olive Oil.

Cover bruschetta with plastic wrap.

Marinate in the fridge for a couple of hours.

Serve on top of your favorite bread, crackers, etc.
