While in Seattle this past week visiting cheese shops (twelve shops in seven days; a whirlwind cheese tour), I met many amazing and passionate Cheesemongers. At the Fred Meyer store in Kirkland, Washington, I met Shari, who in addition to mongering, loves to cook and develop recipes.
One of her favorites is a blue cheese spread that she shared with me. Here’s her recipe:Ingredients:
16 oz. Philly Cream Cheese (softened)
4 oz. blue cheese (the stronger, the better!) Smoked blue cheese is also great with this!
4 diced green onions, tops included
1 1/2 teaspoon red pepper flakes
Mix well, serve… as it sits in the fridge, it becomes more intense.
For the spread she shared with me, Shari used Rogue Creamery’s Crater Lake Blue. It was luscious; the cream cheese making it spreadable and the Crater Lake Blue making it robust. I took some back to the hotel for The Man to try who declared it “Swoonable”, which he did…
