Cheese of the Day: March 2 – Grayson

Our Facebook Cheese Study Group continues our deep diving into cheeses on March 2 with ACS CCP® Erin Clancy introducing us to Grayson, a Tallegio-style washed rind made by Virginia’s Meadow Creek Dairy. Here’s what she shared with our study group:

“Welcome to Cheese of the Day Thursday edition. On Thursday’s we will dive deep into the stinky world of washed rinds. Today we start with Grayson from Meadow Creek Dairy. Grayson is a raw, Jersey cow’s milk, farmstead cheese from Virginia. It is named after the county in SW Virginia that Rick & Helen Feete, the cheesemakers, live in.

Grayson is a 9-inch square cheese based on a Taleggio recipe. It was washed in a salt brine, aged 5 months, and only available seasonally. These Jersey Cows are born and live on pasture grazing on the grass and legumes that the land has to offer. They are milked from March until November and then the cows get a well deserved rest.

Grayson has a buttery soft, fudgy texture. It has a meaty, beefy, bacony flavor (bacon cheeseburger cheese anyone….anyone…?) with hints grass. It pairs best with a Belgian-style Golden or Tripel (think Allagash, Ommegang, Northcoast or actual Belgian beer like Westmalle, Tripel Karmeliet, or Chimay).
