Dany Schutte ACS CCP™ Bio
I work for Southern Season in the Richmond location. Originally, Cheesemonger at the Store. Which meant department manager, running the counter, selecting and buying, selling to customers, training my staff.
Currently I am Corporate Cheese Buyer or ‘Head Cheesemonger’ for the chain. The position is evolving, but I’ll choose the direction that our selection moves in, oversee training for the mongers in each location.
I pull cheese from the coolers, merchandising the counters, teach my staff about cutting and wrapping, caring for the product, helping customers, respond to vendors, set promotions, select cheeses to support events in our Cooking School, Wine Events, Cheesemonger Plate in the Restaurant. Sometimes I even serve as Manager on Duty running the shift of the whole store. So my job is never boring.
My second job I ever had was in a neighborhood grocery store and I ended up in the cheese dept. But it took me another 17, 18 years to find my inner cheese geek. I was in my mid-thirties and had wandered my way from Virginia to Texas to San Francisco. I had my awakening and thought wow, cheese is amazing.
My thanks to everyone participating in my 2015 Virtual Q&A with Cheese Professionals. I hope all of you, my loyal readers, are enjoying this as much as I am…
Interviews will continue throughout 2015… sometimes, they will be “stand-alone” and sometimes they will be presented as round-table discussions with several Cheese Professionals answering the same question. Those participating include Cheesemakers, ACS CCPs™, Cheesemongers and Cheese Professionals and Experts who contribute to this Wonderful World we call “Cheese”.
