Jed Asmus, Owner and Cheese Maker, Ewetopia Dairy Bio
Myself, along with the other owners all work in the dairy industry, working with producers directly as their nutritionist and veterinarians. We work with numerous family farms, from cow dairies to goat dairies, along with our own animals. In total, we assist in the care for over 150,000 animals.
Philosopher, our first cheese, is a young / fresh cheese, so caring for it is easier than most. We keep our cheese at a cool 38 degrees. However, because it’s stored out of Brine, and in 3.5 pound wedges, we are extra careful not to damage our delicate cheese.
