Cheese of the Day: Garroxta Presented by ACS CCP® Elizabeth Nerud:
Here’s a great little cheese for you. Our cheese of the Day is Garroxta. It comes from northeastern Catalonia, Spain and was in near extinction until it was rediscovered in the 1980’s. Now there are ten creameries which produce it, all using traditional methods. Several names are associated with this revival, among them Enric Canut and his colleague Ramon Badia, who who promoted and taught about goat cheese. It is due to their efforts that we can now enjoy this delightful cheese. There was also an interesting sort of movement of urban hippies who moved to the countryside in the Eighties and collaborating with cheesemakers, they were also instrumental in saving Garroxta’s heritage. Among the neorurals were Toni Chueca, his wife Rosa Heras, also Savador Marti and Nati Ninot. Their son Josep is now runs the creamery. All told, 363,000 pounds of Garroxta is made annually, 20% of which is exported.
The wheels resemble stones, blue-gray in color,and hasa moist yet firm and flaky paste. Mildly goaty, buttery and tangy, one gets notes of citrus, mountain herbs and damp earth, lingering hazelnut and dried fruit. Such a lovely thing, it’s perfect for dessert.
