After becoming an ACS CCP in 2013, I spent the next 5 years creating and compiling hundreds of documents to assist those sitting for the ACS CCP Exam and all Cheese Enthusiasts who wanted to increase their Cheese IQ.  These documents are all posted and linked here.

July 2019 was a magical month for me. I visited the Franche-Comte Region of France, in the Jura Mountains where Comte AOP Cheese is made. As a guest of the Comte USA Association, I toured farms, cheesemaking facilities and the caves of Marcel Petite where more than 100,000 wheels of Comte cheese are aging. And I also spent a week in Paris… indeed, it was a magical month…
