This week on Alpine Saturday: Vacherin Fribourgeois. This cheese hails from Switzerland in the Fribourg (thus the name) canton (like Gruyère).

Format: 6-10kg wheels

Vacherin Fribourgeois has a minimum FDB of 45% and a maximum moisture of 46%. The flavor ranges from spicy and grassy to earthy and sweet
