With my wife Tamara, I own “Cheese Louise” in Richland, Washington. When I began the business, it was located in Walla Walla, Washington and offered almost exclusively domestic and imported artisan and farmstead cheeses. Tamara had a gift shop and a tea room (“Tamara’s Gifts and Teas”) situated in other quarters of the same building but run separately. She also ran a catering service called “Intimate Dinners.” At the Richland location, I am still owner and cheesemonger. Now eleven years later, I do not spend as much time behind the cheese counter at the shop as I did during our first five years in Walla Walla or in the later but more recent years in Richland. Then it was order, handle, display, cut, wrap, maintain inventory, teach from the counter and in formal class sessions.
