HOLIDAY 2019 SPECIALS and SCHEDULE AVAILABLE BELOW!!!

French Brie. Traditional French Brie wheel ideal for wrapping in pastry or phyllo dough for a special baked treat. Served alone with honey or chocolate and a glass of bubbling is a perfect appetizer or dessert. Made with pasteurized cow milk$19.00 – approximately 18 ounces.

Triple Crème Brie. A buttery, creamy, silky cheese that at room temperature spreads like butter. It will contain between 70 and 75% butterfat in the dry matter (this cheese is approximately 60% moisture; which means in an 8-ounce slice, the butterfat would be approximately 3.36 ounces; less than half of the total weight). The rind is edible. Made with pasteurized cow milk. $22 – approximately 16 ounces.

Organic Greek Feta DOP. Until you taste feta made from a blend of sheep and goat milks, you haven’t had “real” feta. Aged for a minimum of six months in a salty brine, feta is perfect crumbled on salads, mixed with EVOO or tucked into an omelet (I chunk it with a little lemon zest and EVOO and eat it in a bowl as a snack). Keep your feta in your fridge covered in brine or EVOO and it will stay fresh indefinitely; however, I’ll bet you won’t need to worry about shelf life. $18 – approximately 14 ounces.

Fresh Chevre Log. Chevre is the French word for goat. The cheese available for order is rindless with a lemony tang. Made with pasteurized goat milk. $10 – approximately 8 ounces.

Vermont Clothbound Cheddar. One of America’s great cheddars, this cheese is made in the English tradition of wrapping in cheese cloth, coating in lard and aging a minimum of twelve months. Made by Cabot Co-Op with pasteurized cow milk, it’s aged in the Cellars at Jasper Hill Farm. Nutty with a caramelized sweet finish, this cheese is vegetarian friendly. Compare with $29.99 per pound at Murray’s Cheese, I am selling it for $20 – approximately 16 ounces.

Ford Farm Coastal Mature Cheddar. Full-flavored and robust made in the traditional English fashion and aged at least 15 months. Mellow flavor. Serve with a full-bodied Merlot or Cabernet Sauvignon. Made with pasteurized cow milk. Vegetarian suitable. $16 – approximately 16 ounces.

Vermont 3-Year Cheddar. Made with pasteurized cow milk by the farmers of the Vermont Cabot Cooperative. Nutty with a sweet finish. Made with pasteurized cow milk. Vegetarian suitable. $25 – approximately 32 ounces.

P’tit Basque Mini Wheel. An aged sheep milk cheese made in the French Pyrenees. It is an AOC “protected” cheese, protected by the French government to control production and guarantee consistent quality. You will taste sweetness with a hint of figs and hazelnuts. Made with unpasteurized sheep milk and aged a minimum of 80 days. I do not recommend eating the rind. $39 – approximately 24 ounces.

Manchego DPO. Manchego is made in the La Mancha region of Spain exclusively with milk from the Manchega Sheep. This offering is aged six months and made with pasteurized sheep milk. The production and aging of Manchego is closely controlled by the Spanish government to ensure its superior quality. The rind is a thin wax that should not be eaten. $35 – approximately 32 ounces.

National Cheese Day Platter Featuring Cabot 3 Year Cheddar

Comte AOC. Made in the Franche-Comte region of France this iconic cheese is the best-selling AOC cheese in France. Comte is made with unpasteurized cow milk and aged a minimum of 120 days. It is sweet and nutty with a slight salty aftertaste. Depending on the time of year the cheese is produced, you might taste a hint of pineapple. While this cheese “stands alone”, it is also my go-to cheese for adult mac n cheese or gratin casseroles because, in addition to tasting sublime, Comte is an excellent melting cheese. The selection I am selling is hand-selected by Herve Mons, a renown French Affineur. An Affineur is the person who oversees the aging of cheese and determines when it is ready for sale. The rind should not be eaten. $21 – approximately 16 ounces.

Jarlsberg. The best-selling specialty cheese in the US. There is always a wedge of Jarlsberg in my fridge. You can snack on it and it makes a terrific addition to your favorite grilled cheese or fondue. Pasteurized cow milk. Sweet and nutty, this cheese is also kid-friendly. $26 – approximately 32 ounces.

Aged Dutch Gouda – Creamy, caramel, nutty and sweets notes. Made in Holland from pasteurized cow milk. $25 – approximately 32 ounces.

Parmigiano Reggiano DOP. Considered universally as the “King of Cheeses”, this protected Italian cheese is a must for every serious cook who prepares pasta dishes, soups and homemade sauces. Toss a strip of rind into your liquid and let it melt down to a gooey finish. Remove before serving. Your guests will beg to know your “secret” ingredient. Buy a wedge and shred or grate at home for peak taste. Only the cheese made under the regulations of the Italian government and the consortium can be called Parmigiano Reggiano; the rest is “just” parmesan. Made using unpasteurized cow milk. $35 – approximately 24 ounces.

Pecorino Romano DOP. Like Parmigiano Reggiano in use, this Italian cheese made on the Island of Sardinia or Tuscany, is produced from unpasteurized ewe’s milk. Salty and dry, this cheese is better as a finishing cheese, grated on top of your favorite pasta dish. $23 – approximately 22 ounces.

Wisconsin Specialty Blue. Robust with a salty finish. This is a great snacking cheese but works also as the cornerstone of a vegetable dip or classic salad dressing. Pasteurized cow milk. $11 – approximately 10 ounces.
