Carr Valley Chipotle Bread Cheese

I have been a fan of “bread cheese” since my second visit to Wisconsin in 2010. On that trip I sampled Pasture Pride’s Juusto and Guusto; similar to Carr Valley’s Bread Cheese. Created in Finland, it is known as “Juustoleipa” (which translates to “Bread Cheese”… ta da…). Sid Cook and the good folks at Carr Valley take this cheese to another level by baking it after the make until it has a toasty brown finish.

I found the Chipotle version at the local Ingles and couldn’t resist bringing it home to share with The Man. Although The Man shies away from the spicy end of the food spectrum, the spice here comes after the bite and is pleasing without “taking the back of your head off” (as our dear friend and poker buddy, Gavin, used to say about spicy food).

I chose to serve it breakfast. I cut into strips and fried until it started to ooze and then plated it with scrambled eggs, mild Italian sausage and fresh avocado. The Man swooned; although if I’m being perfectly honest… The Man usually swoons… he’s quite grateful for a wife who will cook for him on a regular basis… not to take away from the Bread Cheese which he did enthusiastically enjoy.

Bread Cheese is versatile in uses. I have served the traditional (non spicy), cubed, and in salads without warming it. Cold, it squeaks like Halloumi or fresh cheese curds. You can also cube it and toss it into a fruit salad, serve on crackers; the choices are endless.
