La Bottega di BelGioioso Artigiano Mocha… “In Search of the Next Great Cheese”

BelGioioso’s Master Cheesemaker, Gianni Toffolon, is on a life-long search to create the “next great cheese”. On his journey he created a new line of cheeses with proprietary flavor profile and texture, Artigiano. In 2016, I had the opportunity to taste this line and reviewed two from these American Originals: Artigiano Classico and Artigiano soaked in Modena Balsamic Vinegar mixed with Cippolini onions.

Recently, Gaetano, one of the owners of BelGioioso, sent me a wedge of their newest creation in this line: Artigiano Mocha. It is the Classico that has been rubbed with a combination of mocha and espresso powders… combining two of my favorites in life: coffee and chocolate… it doesn’t get much better…and wrapped around cheese… The Man and I were both swooning…

Sweet, nutty with hints of coffee and mocha, especially at the rind, this cheese finishes with pleasant bitter bite. This cheese also boasts tyrosine crystals which further adds to the pleasure.

I paired the Mocha Artigiano with 34 Degrees Chocolate Crisps, my homemade Bourbon-Fig Spread and Oreos. I served these after dinner for dessert… the perfect ending to yet another prefect day with The Man…
