Lisa has been cooking since she was tiny and has been a food professional since high school, when she took her first job at McDonald’s. She graduated from the Restaurant School in Philadelphia and cooked in restaurants and ran cooking schools in Philly, SF and Chicago until deciding in 2007 to focus on cheese and joined Pastoral. She took the challenge of developing their wholesale cheese program in 2008 and has been selling cheese to restaurants and hotels ever since, growing the business to over 75 accounts.
We asked Lisa a few questions:
Your perfect/favorite pairing.
I love mountain cheeses with French hard cider.
Build us your dream cheese plate.
It would be international. It would have 5 cheeses (a Quebecois raw milk soft stinker, a domestic goat, an Alpine, a French blue, a hard Italian) and 5 unique accompaniments (a nut, a salty thing, a chutney, a pickle, and a spicy thing) that you could mix and match playfully. And it would come with a bottle of Riesling Spatlese.
What’s your favorite grilled cheese?
The secret to great grilled cheese is to spread mayo on the outside of the bread to use as the cooking medium. I’ll take a nice stinky fontina val d’aosta on whole grain bread with some Giardinera grilled inside.
Tell us one non-cheese fact about yourself.
I love dogs to distraction.
If you could have dinner with any famous person, alive or historic, who would it be and why?
Ryan Murphy, Creator of Glee (among many other hit TV shows). I want to talk about pop culture.
