Wisconsin Cheese Curds

The Dairy Farmers of Wisconsin sponsored a cheese contest earlier this year to celebrate the 180th anniversary of dairy farming in Wisconsin. The association awarded 180 prizes through a random drawing. I was the lucky winner of “Cheese Curds for a Year” .

Every three months I receive a selection of cheese curds from a different Wisconsin Cheesemaker.

My first delivery was from the Decatur Dairy located in Brodhead, Wisconsin. You can read my thoughts here.

My second delivery was a selection of curds from Renard’s Cheese in Sturgeon Bay, Wisconsin. In addition to their “original” cheese curds, I received bags of their Cajun flavor and Ranch flavor. I shared the flavored curds with friends and kept the “original” to use to make fried cheese curds using this recipe from lifesambrosia.com. I used the 3X recipe with Italian-style panko (because that was what I had in the pantry) and added 1 tablespoon baking powder to the flour to give the breading more “lift”. They came out perfect – The Man swooned… twice.

Renard’s Cheese was established in 1961 in Door County, surrounded by the waters of Lake Michigan and Green Bay. The Door County Peninsula soil has rich nutrients that create lush grazing land for the dairy cows. In turn the cows create high-quality milk to make better cheese. Today, the dairy is run by third generation Chris Renard who received his Master Cheesemaker Certification in 2014.

My third gift of curds came from Hennings in Kiel, Wisconsin, which I visited on one of the 2009 junkets sponsored by the association. At that time, the dairy farmers association was known as the Wisconsin Milk Marketing Board and I have to say, they knew how to put on a “show”, The junkets included 2 – 3 visits each day to dairies (sampling cheese at each); trade shows similar to speed dating – you’d spend 10-15 minutes with each cheese maker or rep and then move on to the next; dinners at popular restaurants (one included dinner at Lambeau Field, another at a Wisconsin casino). Kerry Hennings is one of the most passionate cheesemakers I have met in my decade and a half cheese career. He loves cheese; he loves making cheese and he loves talking cheese. In 2013, he led a “Cheese Curd” panel at the Madison ACS Conference. What a delight to listen to him “sing the praises” of cheese curds.

The selection of Hennings curds I received as part of the Dairy Farmers giveaway included Pepper, Ranch and traditional curds. Again, I shared the flavored curds with friends and saved the Traditional for The Man and me. (I will make Poutine with the Traditional curds and post about them at a later date.)

My friends with whom I shared, loved each flavor and pronounced them “Yummy”.
