The Nutty Sister’s Cheese Squares

Recently you may have seen and read articles regarding the additive qualities of cheese. According to Healthline “Cheese may be mildly addictive due to its protein casein, which your body breaks down into casomorphins. These compounds attach to dopamine receptors in your brain, possibly triggering cravings for similar foods.” WebMD describes dopamine as “a type of neurotransmitter. Your body makes it, and your nervous system uses it to send messages between nerve cells. That’s why it’s sometimes called a chemical messenger.” **

If you disagree with any of the above, clearly you have never tried Nutty Sister’s Cheese Squares. These cheese crackers are nothing short of “cheese crack”… to the point I have to hide them from The Man… okay, I hide them partly in order to hoard them for myself… but you get my point.

Michelle Weatherbee, the Chef behind these babies, works out of a certified kitchen in Hartwell and delivers them locally in Lavonia to Sweet Combs of Honey. LaDonna, Owner of SCOH, tells me they sell out every week.

Based on a family recipe (aren’t most Southern foods based on family recipes?) which Michelle modified to make them less crumbly (for better shipping and traveling), these cheese crackers are chocked full of Georgia pecans from her family farm in South Georgia. There’s a touch of heat that comes late in the taste – just enough to make them even more interesting.

The Nutty Sister also produces a toffee cookie. I have not tried it but if the cheese squares are any indication of quality… you can’t go wrong.

** For Cheese Nerds I found this trivia bit interesting “Dopamine made in the brain through a two-step process. First, it changes the amino acid tyrosine to a substance called dopa, and then into dopamine.” Those wonderful crunchies found in some aged cheeses are tyrosine… which got me to wondering if cheeses that contain tyrosine crystals are more addictive than younger cheese which have no tyrosine crystals? Another rabbit hole to explore…
