Georgia Grown with an American Grana Finish

Proudly, I am now a Georgia Grown member.

Currently, you can buy my Georgia Grown, Small Batch, Fresh Basil Pesto at Sweet Combs of Honey in Downtown Lavonia. The 3 Primary ingredients are locally grown: Basil, Pecans and Elephant Garlic. To complete the recipe I used American Grana and EVOO. The recipe is available at an earlier posting with the only difference being the cheese I used. For my retail Basil Pesto I stayed true to the original recipe and chose Parmesan.

American Grana is a premium, natural parmesan made in Wisconsin by BelGioioso, using an Old World recipe and techniques. Back in the day when I was still slinging cheese at the cheese kiosk, I had the opportunity to visit the BelGioioso plant where American Grana is made. We watched its production, brining and aging.

AG is aged a minimum of 18 months using raw cow’s milk. During the aging, each wheel is hand turned to develop the nutty flavor and the granular texture.

American Grana is rBST and Gluten free and uses an animal rennet for coagulation.

AG makes an excellent table cheese but is also great as a finishing cheese for pasta, soups and in cooking.
