Seven Years Ago Today at WSU Creamery

Seven years ago today (January 5, 2015), a Washington State University creamery student, Brady, spent his day making Natural Cheddar and canning it for sale. That’s right, “canning it”. I wonder where Brady is today? Wherever he is, his cheese lives on in my refrigerator sitting below a can of Cougar Gold made October 18, 2016 by another student, Katie. These are a long ways from the oldest according to the WSU website which found unopened wheels made in 1972.

I have no plans to open either can in my lifetime. I am leaving both to my granddaughter, Katie, with instructions to keep them refrigerated and open each, under the direction of WSU creamery employees, when each reaches the age of 50 years or if she prefers, she can auction them off and most likely make far more than I paid for them.  In 2065, Katie could also decide to will them to her grandchildren and continue the “aging”. In 2012 a batch of cheddar made by Ed Zahn was sold at the age of 40 years. According to the article, its sharpness made it edible only in tiny amounts. Which raises the question, at what age does the cheese “go bad” and become inedible. Katie, our cheese could become the Schrodinger’s Cat of Cheddar.

If you have never tasted the cheeses of WSU, particularly Cougar Gold, then you are missing one of the best cheddars made in the US. How good can cheese in a can be? Pretty damned good. Another question is why cheese in a can (not to be confused with the stuff you squeeze out of an aerosol can)? In the 1940s the US Government was looking for ways to successfully ship cheese to our servicemen oversees. They contacted the head of the WSU creamery and Cougar Gold was created. “Necessity is the mother of invention” is also the concept that led Kraft to create American Cheese for the government. 50/50 is not bad odds for creating an excellent cheese that is easily shipped.
