IMG_20140202_171130_985While creating the spreadsheet of “cheeses to know” for 2014 ACS CCP training classes, I decided to incorporate the cheeses currently listed on my Vegetarian-Suitable and Raw Milk Cheese lists (which will also be updated to this new format).

Please note: Some of these cheeses, while not especially considered “Specialty Cheeses”, are included to offer more possibilities for our Vegetarian fans.

Some of these cheeses are new to me, especially from the raw milk and vegetarian-suitable lists which gives us new cheeses to explore together.

Many European cheeses are made with raw milk for their own market and with pasteurized milk for the USA market, due to FDA regulations regarding raw milk cheeses.
